Easton is a diverse, compact and walkable city of about 27,000, located at the confluence of the Delaware and Lehigh Rivers. It’s the smallest of the three cities in the Lehigh Valley, the third-largest metro area in the Commonwealth. (Trivia: It’s also one of only three places the Declaration of Independence was read.) The city is home to national brands such as Crayola (there’s a museum downtown), Weyerbacher Brewing Company and Majestic Athletic, along with heavyweight champion Larry Holmes. Easton is blessed with many stellar restaurants, ranging from brewpub to French and Italian to Mexican and seafood and then some, plus robust beer-centric venues (Black and Blue, Pearly Baker’s, and Porters’ Pub.) You’ll also find plenty of unique home goods and upscale clothing stores and consignment shops for men, women and children. Easton also has the distinction of being home to the country’s oldest, continuous, open-air farmers’ market, a grower and producer-only spot which operates on Wednesdays and Saturdays from May to November.
