11 Major Problems with American Diet

This article shows eleven different graphs that truly depict the reasons American citizens are more overweight and unhealthy today than in past decades. A lot of these graphs depicted can be related back to the food producers themselves and what chemicals/additives are being incorporated into our food. For example, the large increase in the consumption of soybean oil can undoubtedly be traced back to food processors incorporating this cheap crop into products. The two most shocking graphs in my opinion were the graphs that depicted the huge spike in both butter consumption and in refined sugars. Check it out!

    I think one thing that these graphs don’t address but is necessary to address is the average cost and availability of such unhealthy foods over the years. I feel like now more than ever junky foods outnumber the healthy stuff in stores, which is extremely unfortunate but also absolutely accounts for the change in intake. In addition, it would be interesting to pair these graphs with data about how much people know about nutrition and cooking itself, since being unable to cook lends itself to processed and sugary foods. Overall, I think these graphs do an excellent job of showing the difference of intake, but I think to have them hit even harder would be to show why.

    I really liked reading this; I learn better visualizing facts. I thought the #2 graph was very interesting because I know people have begun drinking more sugary drinks but I didn’t realize that this actually had a negative affect on the milk consumption. I too thought the #5 graph was interesting because many people have switched from butter to margarine because they think margarine is healthier when in actuality it is causing more problems. #7 the graph that talks about wheat is actually very interesting to me because it wasn’t until a few years ago that I became allergic to wheat and I know there are many others who have developed an allergy to it. I can only wonder if these new varieties they have created has anything to do with it.

    I think the most profound idea that these graphs put forth is that we should cease eating fake things. The further a food source is derived from what actually came out of the ground or out of an animal, the less you should eat it. We may point to the early 20th century as a time where everything was made with butter and that was bad, but now we can see that as we’ve replaced butter, we have actually become less healthy. Perhaps butter that comes from a local farm may be a better option to butter replacements that are toted as a healthier alternative.
